Cheesecake Diamonds

Crust and Topping:

  •  5 T. Butter

  • 1/3 c. Brown Sugar

  • 1 c. Flour

  • ¼ c. Chopped Walnuts

Cream butter, brown sugar and add flour and nuts.  Reserve one cup of mixture for topping and set aside.  Press remainder of mixture in 8 x 8 pan.  Bake at 350 degrees for 12 – 15 minutes.

 Filling

  •  ½ c. Sugar

  • 1  8 oz. Cream Cheese ( Softened)

  • 1 Egg

  • 2 T. Milk

  • 1 T. Lemon Juice

  • ½ tsp. Vanilla

Blend sugar and cream cheese until smooth.  Add egg, milk, lemon and vanilla.  Spread over baked crust and sprinkle with reserved topping.  Return to oven for 25 minutes.  Cool and chill.  Cut into 16 diamonds.
