Joan's Favorite Homemade Tomato Soup

Here’s what’s for dinner tonight. A Knilans’ customer, Ruth O, passed along this tomato soup recipe, that is one of my favorites…Joan.

Ingredients:

3/4 c chopped celery
1 c chopped carrots
1/4 c chopped onion
1 Tbsp chopped garlic
1 Tbsp butter
3 c tomato juice or V8
1 c chicken broth
1 7 1/2 oz chopped tomatoes
3 oz tomato paste
1 tsp crushed basil
1/2 tsp crushed oregano
1/2 tsp pepper
1 c whipping cream
4 tsp sugar

Directions: Large pan, cook celery, carrots, onion, and garlic in butter until tender, but not brown. Add juice broth, tomatoes, paste, and spices. Bring to a boil, simmer uncovered for 30 minutes or until slightly thickened. Cool slightly and purée to the consistency you like. Stir in cream and sugar. Top with shredded cheese and croutons.

I always suggest you make a recipe once, as directed. You can make adaptations after. I like a really smooth consistency, so I use my Vitamix or blender to achieve. I also don’t really feel I need the cream; sometimes I add a little almond milk. I also tend to serve with a gooey grilled cheese! I know this will sound weird, but try spreading a little mayo on outside of sandwich, then grill. Makes for a really crispy exterior! Thanks again Ruth O, for passing along.
